Grilled Lemon Herb Chicken Breasts

Ingredients:

4 boneless, skinless chicken breasts

1/4 cup olive oil

1/4 cup freshly squeezed lemon juice

2 garlic cloves, minced

1 tbsp. dried oregano

1 tbsp. dried basil

1 tsp salt

1/2 tsp black pepper

Instructions:

1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, basil, salt, and black pepper.

2. Add the chicken breasts to the bowl and coat them well with the marinade.

3. Cover and refrigerate for at least 1 hour, up to 4 hours.

4. Preheat grill to medium-high heat.

5. Remove chicken from marinade and grill for 6-8 minutes per side, or until internal temperature reaches 165°F.

6. Creamy Sun-Dried Tomato Chicken

Ingredients:

4 boneless, skinless chicken breasts

Salt and pepper

1 tbsp. olive oil

1/2 cup sun-dried tomatoes, chopped

2 garlic cloves, minced

1 cup chicken broth

1 cup heavy cream

1/2 cup grated parmesan cheese

2 tbsp. fresh basil, chopped

Instructions:

1.  Season chicken breasts with salt and pepper.

2. In a large skillet, heat olive oil over medium heat.

3. Add chicken breasts to the skillet and cook until browned on both sides and cooked through, about 6-8 minutes per side.

4. Remove chicken from skillet and set aside.

5. Add sun-dried tomatoes and garlic to the skillet and cook for 1-2 minutes, stirring occasionally.

6. Add chicken broth to the skillet and bring to a simmer.

7. Reduce heat to low and add heavy cream and parmesan cheese to the skillet. Stir until the cheese is melted and the sauce is smooth.

8. Add chicken back to the skillet and coat with the sauce.

9. Garnish with fresh basil and serve.

10. Chicken Fajita Salad

Ingredients:

4 boneless, skinless chicken breasts

1 tbsp. olive oil

2 tsp chili powder

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp cumin

1/2 tsp salt

1/4 tsp black pepper

2 bell peppers, sliced

1 onion, sliced

8 cups mixed greens

1 avocado, sliced

1/4 cup cilantro, chopped

1/4 cup lime juice

Instructions:

1.  In a small bowl, whisk together olive oil, chili powder, paprika, garlic powder, onion powder, cumin, salt, and black pepper.

2. Rub the spice mixture over the chicken breasts.

3. Heat a large skillet over medium-high heat.

4. Add chicken to the skillet and cook for 6-8 minutes per side, or until internal temperature reaches 165°F.

5. Remove chicken from skillet and let rest for 5 minutes.

6. In the same skillet, add bell peppers and onion and cook until tender, about 5-7 minutes.

7. Assemble salad by dividing mixed greens among four plates.

8. Top each plate with sliced chicken, sautéed peppers and onions, avocado, and cilantro.

9. Drizzle with lime juice and serve.
